 QUICK TREATMENTS: Once Pretty Cake

Rum balls from leftover cake

“If you ever have any leftover cake, make rum balls. We’re not talking about spoiled stuff but leftover cake nobody is going to eat. Put a paddle in your mixer, put in a little butter cream and ganache if you have it, and then blend the two. Whatever pastry you throw in your mixer will probably already have some crème in it so you really don’t have to add more. If this will be served to adults only, you can add rum to the mixture. Remove and roll the pastry into balls, dip them into chocolate or roll them in sprinkles – what we call jimmies. Your leftover cake becomes a new dessert and I guarantee the kids will go crazy over it!” (Source: Chef Jacquy Pfeiffer, French Pastry School, Chicago)

Brand new cheesecake from leftover cheesecake

“You can make a brand new cheesecake out of the cheesecake slices you have left over from a dinner party. Just blitz the pieces in a blender with more cream cheese and then tuck it into a new mold!“(Chef Richard Fox, Love Food Hate Waste Roadshow, UK)

Cheesecake crusts from ground biscotti

"I understand that by nature Biscotti are supposed to be dry – but they can also be dry and flavorless!  Yet biscotti is made with things I love - like brazil nuts, almonds, macadamia nuts - and that’s why they make such a beautiful graham cracker-like crust in cheesecakes. Just grind them in a food processor and use them as you would graham crackers." (Brook Hurst Stephens of Learn to Preserve, Washington State)
