CORNED BEEF

Farmhouse Soup with Corned Beef

Serves 4

Not enough leftover corn beef to make a sandwich? Cube it and surrender this deli meat to the slow cooker. It’s instant aromatherapy if you’re into Jewish deli. (Aside: If lines of fat threading through corn beef happens to gross you out, it’s in a much better place now … a broth fit for the Gauls!)
 
6 slices corned beef, cut into cubes
3 sausages, cut lengthwise and sliced
1.5 cups sauerkraut, cooked
1 tsp. caraway seed
1 celery stalk, chopped
1 large onion, chopped
4 cups broth, beef (or chicken)
1 Tbsp. oregano, dried
1 Tbsp. rosemary, dried
½ cup dry white wine
¼ cabbage, chopped
1 can cannellini beans
 
  1. Put in crock pot on low for 6-8 hours.
  2. Half an hour before serving, mix in cannellini beans. Serve.
