  COOKED POTATOES, HAM & ASSORTED VEGGIES

Jackie's Ham N' Cheese Strata 
Serves 8

Jackie Anderson lives, works and plays in Ketchum, Idaho with her wonderful dogs, Rosie and Daisy and her charming husband Peter. Green before green was in, Jackie has been a devoted "expendable edibler" all her life, doesn't believe in throwing anything out and has been working her culinary magic on Peter for 31 years. He's still alive so it must be good stuff! Jackie writes:

"My husband loves my strata. (He can get 
over the white bread thing.) As for the once cooked potatoes and leftover ham bits, my belief is that any cooked food you have left over, you can always use up or freeze for later. That is why God invented vacuum sealers like Food Saver!!!"
 
Prep time: About 30 minutes
Cooking time: 1 hour
 
4 eggs
1 can evaporated milk
2 cups cooked leftover ham, diced
1 -1 1/2 cups cooked mashed potatoes
1/2 -1 cup cooked broccoli, diced* (or what other vegetables you have on hand)
3-4 slices white bread, cubed and buttered,
1 cup Parmigiano-Reggiano, shredded**
½ cup Mozzarella
 
  1. Heat oven to 350-degrees.
  2. Blend eggs, milk, and mashed potatoes in a bowl.
  3. Line a buttered 8 x 12 baking dish with buttered bread cubes. Sprinkle diced ham, veggies, and 1 cup cheese over bread cubes. Season with pepper (salt to taste).
  4. Pour blended egg mixture mixture evenly over all. Top with remaining 1/2 cup cheese.
  5. Bake in oven for 30 minutes.

 
*vegetable is optional and frozen will work great too

**use any combination of cheese you wish
