CHICKEN

Reincarnated Chicken Soup
Serves 2-4

Who’s to say whether reincarnation is for real or not - but this chicken treatment will make a believer out of anybody! It’s for any leftover morsels of roasted chicken too good to throw out but not buff enough for a thick and juicy sandwich. Aromatic and fast to make, all you do is drop the ingredients in a pot and simmer on low until ready.
 
 
Any quantity once cooked roast chicken including carcass
3-4 onions, peeled and quartered
4 cloves garlic, peeled and cored
2 carrots, peeled and cut in pieces
2-3 celery ribs
2 bay leaves
½ bunch parsley, rinsed
Fresh herbs like dill, basil, or thyme (optional)
1 cup dry white wine
Matzo balls* (follow package directions), or 1/2 rice or 1 pkg. soup noodles
   
  1. Drop all ingredients in a large stock pot, fill with cold water until  ingredients covered by 1 inch.
  2. Add wine and bring to a boil. Allow to boil for 2-3 minutes, reduce flame to low and skim any residue from the top.
  3. Cover with the lid leaving a small vent to allow for excess steam to escape. Check the soup in an hour and adjust seasoning with salt and pepper. Cook for another hour. Allow to come to room temperature and strain solids through a colander. Discard solids.
  4. Pour broth into a clean pot and return to a boil. Reduce to a simmer until matzo balls*, rice or noodles are thoroughly cooked through. 
 
* You still can't beat the fool-proof mixes available at most grocery stores.
 
 
Cooking tip: Want a more intensely flavored soup because you’re not as flush with chicken as you originally thought? Substitute one can chicken broth for  2 cups water.
