WATERMELON, CORN, RED PEPPERS & RED ONIONS

Chinese Take-Out Watermelon Corn Relish
Serves 2-4

We always wondered what we could do with that canary yellow package of hot mustard that comes with our Chinese take-out. This crunchy, refreshing relish was the answer; we love it on grilled or broiled chicken breast.  

1 cup cooked corn, cut from the cob
1 cup worn watermelon (rind and seeds removed), coarsely chopped
1 cup crisp cooked green peppers, coarsely chopped
1/2 cup cooked red onions, coarsely chopped
2 tsp. hot Chinese mustard (from take-out packet)
1½ tsp. garlic, minced
1 Tbsp. olive oil
2 teaspoons red or white wine vinegar (or to taste)
Kosher salt to taste
Sprigs of fresh cilantro

  1. Toss all ingredients together, then chill for one hour or more.
  2. Garnish with cilantro.
