Asian BBQ Beef brisket
Servings: approximately 3-4 slices per person
Did you ever make a particularly tender roasted brisket and leftovers are still staring you in the face each time you open the fridge? Try this fast fix with an Asian twist. Serve with a side of stir fried greens or simple soba noodles and dinner is on the table in 15 minutes.
1 tsp. sesame oil
1 Tbsp. olive oil
3 scallions, sliced (or ½ onion, finely chopped)
1 clove garlic, peeled, cored and finely chopped
1 cup beef or chicken stock
1 cup commercial barbecue sauce
2 Tbsp. soy sauce, low-salt
2 cups cooked beef brisket, sliced against grain
*optional: 2 tsp. finely chopped cilantro
- In a medium sized sauté pan or skillet, heat sesame and olive oils until hot. Add scallions and garlic. Saute, taking care not to burn. Add sauces and broth.
- Reduce heat to medium until sauce bubbles gently, about 2-3 minutes. Add meat and turn slices over to coat on both sides. Reduce to low, cover pan and simmer for approximately 10 minutes until thoroughly heated.
- Serve on top of noodles or alongside rice. Garnish with cilantro.
Cooking tip: If you prefer a less sweet sauce, use a bit more soy and less barbeque. Don’t add salt since the soy is already salty, even the low-salt variety.
