Sausage Pizzetta
1 pizzetta serves 2 as appetizer
Who says a burrito can't second as a pizzetta? As long as you don't fold it, you have a miniature, thin crust pizza sturdy enough to support those little chunks of sausage from the grill or the skillet.
1 large burrito, plain or herbed
1 Tbs. olive oil
1 tbs. pesto
½ C. finely chopped tomatoes
1 C. once-cooked sausage, crumbled
½ red onion - thinly sliced (or 1/3 c finely chopped green onions)
1 C. shredded mozzarella
1 tsp. dried oregano
½ C. goat cheese or crumbled feta
Ground pepper to taste
Optional: fresh basil, shredded into ribbons
- Preheat oven to 375 degrees.
- Place burrito on cookie sheet.
- Whisk olive oil and pesto together well.
- Using pastry brush, spread mixture evenly onto burrito.
- Sprinkle crumbled sausage or sliced sausage on top. Add mozzarella cheese, oregano and pepper. Dot with goat cheese or feta.
- Bake for 7-10 minutes or until cheese is melted and bubbling and burrito begins to brown.
- Remove from oven and let rest for 2-3 minutes. Best sliced with rolling pizza cutter.
Variation: Substitute once-cooked shredded chicken for sausage.
