Nutmeggy Cauliflower Puree
Serves 2-3 for pretty plating

Steamed up more cauliflower than you can eat? If you have between 2-3 cups worth, puree it with 1 cup chicken stock, nutmeg and sage, salt/pepper to taste, and 2 tablespoons cream cheese. If you want it more like a creamy soup, add more chicken stock and cream. Experiment!

Presentation tip: Make a little puddle of the puree under a featured entree with a bold contrasting color, like steak or a crispy grilled fish.
