TURNING MILK
Turning milk substitutes for buttermilk
If milk is just at the point of going sour, I’ll use it in a scone recipe calling for buttermilk. I may even add an extra tablespoon of vinegar to help it curdle. Once you put the vinegar in, it curdles almost instantly. Sour milk for buttermilk is a common substitution I make all the time – at least for me it’s common.” (Bobbi Marstellar, recipe developer, Chicago)
 
HARD CHEESE
Cheese “rocks,” wine and garlic broiled on toast

“Little dry, even moldy ends of cheese are perfect to make Fromage Fort, a recipe I found in an old Jacques Pépin book. Basically, you grind up the cheese rocks with white wine and garlic and keep it in the fridge to spread on toast and then broil until it bubbles.”   (Mitchell Davis of The James Beard Foundation, New York City)
