Apple Oatmeal
Serves 2-3

Ever leave half an apple on the kitchen counter overnight? The next day, it's slightly dried out, but the flavor is now made even more intense from the nighttime dehydration. Pop pieces into your morning oatmeal, and you’ve got a breakfast dish that is quick, healthy, with apple-y goodness inside.
4 cups water or skim milk
1/2 cup past peak apples (or pears), peeled, cored, finely chopped
1 Tbsp. butter (optional)
2 cups old fashioned oats
1 tsp. ground cinnamon
Brown sugar, cinnamon and white sugar* to taste
- Bring liquid to a gentle boil.
- Add butter, cinnamon, chopped apple. Stir and turn heat to medium. Cook for 2-3 minutes.
- Slowly add oatmeal, until incorporated, with a wooden spoon. Reduce heat to low, stirring occasionally, about 5 minutes until done.
- Sprinkle with brown sugar, extra cinnamon and white sugar.
*sugar substitute
