Hot Apple Cinnamon Topping

A bowl of apples – such a beautiful still life on the dining table. But if they’ve been in the sunlight too long, they become slightly less crisp on the inside, and wrinkled on the outside. Here is a very quick fix, both healthy and tasty, not to mention versatile. Use this hot apple topping over breakfast treats like oatmeal, pancakes, waffles, or as a sundae topping, over ice cream.
2 past peak apples, peeled, cored and chopped finely
2 Tbsp. sugar per apple (or substitute1 Tbsp. artificial sweetener)
2 tsp. ground cinnamon
1 Tbsp. unsalted butter
Squeeze of fresh lemon or orange juice (optional)
- Heat butter in a medium skillet, preferable coated. When butter begins to brown, add cinnamon, sugar and stir until incorporated.
- Add apples and sprinkle with lemon or orange juice. Stir occasionally until apples and cook over medium heat until softened and browned about 5 minutes.
- Over oatmeal, pancakes and waffles, serve immediately. As ice cream topping, heat on HIGH in microwave for approximately 30 seconds.
Storage tip: This hot apple topping keeps in the refrigerator for about 3 days in an airtight container.
