Caramelized Bananas

Is the peel of your banana as spotted as a zebra? As long as the spots are brown, your banana is perfect for caramelizing. Melt a pad of butter in a frying pan over low heat, slice your banana lengthwise and lie round side down in the melted butter. Sprinkle liberally with cinnamon and nutmeg and flip over. Do the same on the rounded side, and then sauté the banana until the flat side starts to brown and caramelize a bit. Flip and brown the round side a tad (but not too long or the banana gets too soft to remove with a spatula).
Serving suggestion: Serve with a thick plain Greek yogurt or a skinny kefir. Top with granola and berries.
