PEACHES

Slightly Stewed Peach Treat
Serves 4 to 6

The end of summer means amazing specials on farmers’ market produce. You’ve seen them - bushel baskets brimming with succulent and fragrant peaches, plums, nectarines, apples and pears, priced to move fast! So you end up buying far more than you can eat. But with this quick peach treat, we say: go ahead and indulge! Every peach - ripe or very ripe - ends up in your belly!
1-2 cups fruit juice, water or both to cover
½ cup Triple Sec or Grand Marnier (or other orange-flavored liqueur)  
1-2 Tbsp. sugar
1 tsp. citrus zest (tangerines or oranges, white pith removed)   
3-4 very ripe peaches, pitted and sliced
 
1.   Over medium heat, bring liquid to a boil.
2.   Add fresh and optional dried fruit. Stir gently with wooden spoon. Simmer in covered pan until tender. 
3.   Transfer to container and chill covered in refrigerator.  
 
Serving suggestions:   Spoon over ice cream, and tuck in a few Florida Sunshine Sugar Cookies made with orange zest
