Cut wrinkly cherry tomatoes in half and saute in a teaspoon of sesame seed oil and a tablespoon of canola oil over medium heat. Add dash of oregano, soy sauce, hoisin sauce and chunks of eggplant (with skin). Add two tablespoons of water (or even leftover tea), and cover over low heat until eggplant can be cut easily with a fork. Serve with roasted potatoes, brown rice, or whole wheat orzo.
