 ORANGE PEELS

Orange Sugar
Yield: ½-3/4 cup

We peel an orange but rarely for the peel - a wonderfully supple, richly-scented material you can candy or use to deodorize the disposal.  Or you can make Orange Sugar by taking peels to the next level with a food processor - ending up with a substance that sifts beautifully into baking batter. Consider adding Orange Sugar as an aromatic sweetener for banana bread, cookies, pies and all kinds of homemade pastries.
  
 
1 orange
½ cup sugar
 
  1. Using a sharp knife or a vegetable peeler, peel the orange and remove the pith (white part of peel). Reserve the fruit for your eating pleasure.
  2. Place sugar and peel into the bowl of a food processor and chop very finely, pulsing until very, very fine.
  3. Seal in an airtight container and refrigerate.
