BROCCOLI STALKS

Grilled Pimento Brocc-Stalk Sandwich
Serves 1 
 
A recipe by Jonathan Bloom, author of "American Wasteland:

  

Says Jonathan: “I’m more like a lunch cook. I like sandwiches mostly. That’s where my creativity comes out. Now, I take care of my son during the day. He’s two. I was giving him broccoli stalks, steamed. But then there were 4-5 pieces left so I stuck those into this grilled cheese sandwich I make with pimento cheese on rosemary sourdough bread.”
 
1 /2 tsp. olive oil
1 pad butter
4-5 broccoli stalks, peeled, cut into strips and lightly steamed
¼ sweet red pepper, sliced into strips
Numerous pimento cheese slices
2 rosemary sourdough bread slices
 
  1. In a heated pan, melt olive oil and butter.
  2. Assemble sandwich and place in pan, placing heavy plate on top for 3 minutes. Remove plate and flip sandwich to grill other side for another 3 minutes or until pimento cheese is melted to your liking. Serve immediately.
