  PECAN or PUMPKIN PIE

Un-Eaten Pie Parfait
Serving based upon quantity of pie

Has this happened to you? The day after Thanksgiving you’ve got leftover pie. That wouldn’t be a problem except that the pie has already been cut into individual servings, not enough to serve a family of four, but too much for one or two. Our solution exploits what, mathematically does not compute - serving more than three guests less than half a pie.  Here’s an unfussy yet picture perfect parfait treatment for pecan (or pumpkin) pie. 
 
3 slices of pie
Vanilla ice cream, slightly softened
Gourmet quality chocolate syrup
 
Note: parfaits make a great presentation when assembled in glasses with pedestals or even sturdy wine glasses.
 
  1. In a food processor fitted with a steel blade, pulse pie slices until coarsely chopped.
  2. Press softened ice cream into the bottom 4th of each glass.  
  3. Press an equal layer of chopped pie, followed with ice cream and ending with chopped pie
  4. Cover each glass tightly with plastic wrap and freeze for 15-20 minutes or until firm but not frozen. 
  5. Serve immediately topped with chocolate syrup.
 
Presentation tip: Throw caution to the wind and add whipped cream!
