 CRANBERRY SAUCE

Level 1
Cranberry Sauce Syrup
Serves 2-4

- a Marlene Samuels creation -

Cranberry sauce really is too good to spend every second keeping a cooked turkey company. So why not transform it into a colorful dessert syrup? Drizzled over vanilla-coconut ice cream, fruit sorbet, or poached fruit, Cranberry Sauce Syrup looks way fancier than it really is. For an “Adults Only” take, we even add a splash of Campari or Grenadine.

Cookware tip: A good silicone spatula will help you lap up those last drops of syrup from the pan.

Note: Recipe doubles and triples easily.
1 cup cranberry sauce
1 cup water
1 Tbsp. sugar

  1. In a food processor, puree cranberry sauce until smooth.
  2. In a small sauce pan, heat 1 cup water, 1 Tbsp sugar stirring until sugar dissolves.
  3. Add pureed cranberry sauce and simmer on low for 1/2 hour.
  4. Strain through a fine sieve and return strained liquid to pan.
  5. Cook on low until reduced by half or until thick enough to coat a wooden spoon.
  6. Remove from heat and bring to room temperature before refrigerating.
