 TURKEY & GRAVY, VEGETABLES, MASHED POTATOES

Turkey Day Shepherd’s Pie

Shred a few cups of leftover Thanksgiving turkey and put on the bottom of a pie plate. Add leftover vegetables (like carrots and corn). Slather with leftover gravy. Top with leftover mashed potatoes. Use the tines of a fork to make decorative grooves in the potatoes. Then sprinkle with paprika.
 
Bake in a 350 degree oven for around 40 minutes to warm through.  
 

Substitution tip: If you don't have leftover mashed potatoes, top with puff pastry, brushed with a beaten egg wash. Check it in 30 minutes, to make sure the puff pastry doesn’t darken too much. Let sit a minute or so; then dig in.
