 SWEET POTATOES

Sweet Potato Peanut Butter Cookies
Serves 8 (2 per person)

Consider using a cup of cooked sweet potatoes in your favorite peanut butter cookie recipe for the orange tint and added complexity. You may need to add a bit of extra flour to the batter for the right consistency.
 
Basic Peanut Butter Cookie Dough
 
½ cup butter
½ cup peanut butter
1 cup cooked sweet potatoes
1 cup dark brown sugar, firmly packed
1 egg
2 ½ cups unbleached flour
¼ tsp. salt
2 tsp. vanilla extract
½ cup chopped nuts (optional)
 
1.       Pre-heat oven to 375 degrees.
2.       In a large bowl, cream butter and peanut butter and salt.
3.       Add in brown sugar blending well. Stir in egg, vanilla and sweet potato. 
4.       Gradually incorporate flour. Dough should be very firm. Add additional flour if necessary. 
5.       When thoroughly blended, form into a ball and divide into half. Roll each half into a log.
6.       Cut 1 inch thick slices off log, roll into small balls and place on greased cookie sheet.
7.       Flatten each ball with tines of a fork, first in one direction then the other to form cross-hatched pattern.
8.       Bake 10-12 minutes or until light brown.

 Cooking tip: Easy to make in a food processor. But if adding nuts, be sure to blend these in by hand.
