POTATOES, EGGS, SCALLIONS &, DIJON MUSTARD

Eggy Potato Salad Sandwiches

Egg salad sandwiches are another great alternative to processed meat or cheese sandwiches and fast food stuff when you're on the road. You can eat with your hands and forget worrying about whether you have a plastic spoon or fork!
 
If your concern is the ratio of mayonnaise to everything else, relax.  The rule to follow:  taste and evaluate; taste and evaluate, one teaspoon at a time.  Worried about mayonnaise spoiling?  It takes about 12 hours at room temperature spoil. If you’re reluctant to use mayonnaise, use salad dressing or oil and vinegar.
 
4-6 eggs, hard boiled
2 scallions, finely chopped
1 Tbsp. Dijon mustard
1 Tsp. drained capers
Chopped fresh herbs (dill, basil or parsley)
 
In a bowl, mix all ingredients together with a wooden spoon. Serve on multigrain bread or toasted pita pockets.
