Once-Cooked are foods we cooked already that are still moist and flavorful after, say, 3-4 days in the fridge. These foods can range from single ingredient dishes (such as cooked chicken or salmon) to side dishes with two or more ingredients. Either way, they can be easily shape-shifted into an entirely new extraordinary dish by borrowing preparation techniques and seasonings from ethnic cuisines, or something less exotic but with a wholly different presentation.
