FRUIT

We tend to underestimate all the things you can do with the skin of fruits:

  • giving zip to a dish by using fresh zest as a flavor enhancer or as a garnish
  • candying peels or flavoring marmalades
  • pickling rinds like watermelons, or
  • using grape skins to add delicate texture to sorbets or ices, or to sweeten a duck curry
